  • Baking Powder
    • 1 teaspoon (5 grams) of baking powder equals 1/2 teaspoon (2 grams) cream of tartar plus 1/4 teaspoon (1 gram) of baking soda (2:1 ratio)
    • More precise: 1 teaspoon / 5 grams of baking powder equals 1/2 teaspoon / 2 grams cream of tartar plus 1/4 teaspoon / 1 gram of baking soda and 1/4 teaspoon corn starch (2:1:1 ratio) to compensate for the missing 1/4 teaspoon / 1 gram; however, if the recipe calls for a cup of flour / 120 grams, then the 1/4 teaspoon / 1 gram is not likely to be missed.
  • Brown Sugar
    • Light Brown: 172 grams sugar plus 20 grams molasses (approximately 1 cup sugar + 1 tablespoon molasses)
    • Dark Brown: 152 grams sugar plus 40 grams molasses (approximately 1 cup sugar + 2 tablespoons molasses)
  • Salt
    • 1 teaspoon of table salt is approximately 6 grams
    • 1 teaspoon of kosher salt is approximately 3 grams
